I called it “mini” because these are not large squids, lol… but nonetheless I managed to stuff these medium squids and turned out great. Unlike with our previous Relleno, which is a bit oily this one is not since I cooked it by steam…

Pusit Relleno (STuffed Calamari)

I have the recipe below in case you’d like to do it as well:

You will need:
10-12 pcs large squids (a medium one will do just what I did, hehe)
1/2 lb ground pork
3 stalks green onion, finely sliced.
i egg, beaten
salt and pepper to taste

For the sauce:
1 tbsp oil
1 clove garlic, minced
1 medium-sized onion, chopped
1 medium-sized tomato, chopped
1/2 bay leaf
1 tbsp soy sauce

Here’s how:
Remove squid heads and ink sacs. Clean cavities well, Sprinkle salt lightly on squids. Set aside.
In a bowl, combine ground pork, green onions, beaten egg and a little salt and pepper. Stuff squid cavities with this mixture. Place in a pan in a steamer and steam covered for 10-15 minutes or until filling is cooked. Drain liquid that will accumulate in pan. Set aside.

Prepare sauce while steaming squids.
In a skillet over medium heat, saute garlic in oil until lightly browned. Add onion and stir for 1 minute. Add tomato, bay leaf and soy sauce and cook for 3-5 minutes until tomato pieces are soft. Pour sauce on top of stuffed squids. Serve immediately.

This is good for 4-5 persons.
