Carrot Cupcake

The first time I baked a carrot cake was last Dec 2007 but it didn’t turn out the way I expect them to be. As hubby and I noticed, something missing in the process or a certain ingredient has not been added. Though it got the taste of what’s the carrot cake should be, it didn’t have the moist texture that I like. So I promised I’m going to do it again.

Two weeks ago, I’m thinking about this carrot cake. I browsed on the net for another recipe that I can use and I found one at this site. (Love all the baking goodies at that site… ;) ) Anyway, so I bought a bunch of carrots from the supermarket, but it wasn’t done until last Saturday. The husband was around and he can look for the little boy and that I can bake successfully.

Ok, so I adapted the recipe here but instead of doing the round cake, I made it a cupcake and I didn’t put any frosting. And the result:

… the carrot cupcake that I really wanted. :) I use Pecans and the moist texture is now present. That’s because of the crushed pineapple I added, which I didn’t put the first time I baked.

Now the more I enjoyed my carrot cupcake together with my hot coffee… :) yummy!

I’ll do this again and I’ll try to put frosting on it…

    I love carrot cakes. Natikman mo na yung carrot cake sa Carrot Cake dito sa Pinas Caryl? Grabe ang sarap pati icing. Yikes! :P

    love carrot cakes too! matrabaho lang kasi you have to grate a whole buncha carrots… funny kasi d talaga lasang lasa ang carrot! the cinnamon pa! :)

    masarap? di ko talaga type ang cinnamon, kaya di ko sure kung gusto ko yan :D pero in fairness, ganda ng kuha mo :D

    Carrot cake is my ultimate fave. Kaya lang, I really am bad with baking. Im more a cook than a baker. I know. I am intimidated with actual recipes kasi, having learned to cook by eyeballing stuff.

    This really looks good.
