Before I’m hooked looking on various Cozumel vacations photos, let me share first this recipe from City Super flyer that we got… Looks delish and I’ve included this on our menu list…
Maple syrup is not just a sauce to pour over pancakes but it can be used in both sweet and savoury dishes or sauce and it can often be used as a substitute for honey.

-Pork powder 2 tablespoons
-Shrimp paste 3 tablespoons
-Dried chilli powder 1 tablespoon
-Salt and white pepper to taste
-Olive oil for marinating
-Grapeseed oil for deep frying
Batter:
-Flour ½ cup
-Yeast 2g
-Salt a dash
-Baking soda 1 teaspoon
-Egg 1 piece
-Beer ½ can
Sauce:
-Maple syrup 3 tablespoons
-Dried chilli powder a dash
-Shrimp paste ½ teaspoon
-Salt to taste
-Deep-fried garlic 2 tablespoons
How to cook:
1.For the batter, mix flour, egg, baking soda, yeast and beer in a bowl. Season with salt and pepper.
2.Marinate pork belly cubes with shrimp paste, pork powder, pepper and salt. Coat with olive oil.
3.Heat up oil for deep-frying. Coat marinated pork belly in flour before dipping them in batter. Deep fry till golden about 2 minutes.

Enjoy!
