Pecan Brownies
Though one of my agendas last weekend was to bake, it’s not my plan of doing this Pecan Brownies.
I’m eyeing to bake a Blueberry slice since my blueberries will expire soon. But I’m lacking one of the ingredients, which I couldn’t find in the nearby supermarket. I’m sure it has on the other store but I need to commute to get to that store, which is quite far. Then the thought of baking brownies came up when I saw some Pecan nuts on the cabinet. It made me smile and then I said to the husband, I’m going to use this and bake brownies…

Compared to the brownies I usually bake, this one is different. As the husband commented, “medyo mapait ito compare dati”… (this is a little bitter than the previous).. and when I tasted it, yes it was a bit bitter. I’m suspecting the chocolate I use. It’s unsweetened chocolate then I put cocoa more. With the previous brownies, I didn’t add cocoa and I use raspberry on it (i’m gonna do that again) … So my suggestion, maybe you could use a dark chocolate but not unsweetened. I’ll try to that next time and see the result.
Anyway, here’s the process I use. You may want to do it also at home…
Preparation time: 15 minutes
Cooking time 35 minutes
Makes 16 pieces
Ingredients:
125g dark chocolate
90g unsalted butter, softened
1 cup (250g) caster sugar
1 tsp vanilla extract
2 eggs
2/3 cup (80g) plain flour
1/4 cup (30g) cocoa powder
1/2 tsp baking powder
1 cup roughly chopped pecans
Procedure:
1. Preheat the oven to moderate 180C (350F). Grease a square tin and line the base with baking paper.
2. Chop the chocolate into small even-sized pieces. and place in a heatproof bowl. Bring a saucepan of water to the boil and remove from the heat. Sit th bowl over the pan (ensure the bowl doesn’t touch the water). Stand, stirring occasionally, until melted. Cool slightly.
3. Beat the butter, sugar and vanilla with electric beaters until thick and creamy. Beat in the eggs one at at time, beating well after each addition. Stir in the chocolate.
4. Fold in the sifted combined flour, cocoa and baking powder with a metal spoon, then fold in the pecans. Spoon into the tin and smooth the surface.
5. Bake for 30 – 35 minutes, or until firm and it comes a way from the sides of the tin.
6. Cool in the tin, remove and cute into squares.
