Almond Chews

I’m so excited to share this chewy indulgent slice that I have baked last weekend- Almond Chews. The leftover flaked almonds that I have inspired me to bake this yummy goodness. It’s my first time and I can truly say it was successful and great afternoon snack. The husband loves it and I like it too. Good pair for a hot coffee or tea.

The recipe, which I got from one of my mini cookbooks, will make 35 pieces but since I’ll just try it and it’s my first time, I halved the ingredients and that will fit to my small square non-stick pan. Also, I was thinking we might not like the taste and it will not be consumed, a total waste. But you know what happened? …it’s the other way around, we finished it in one day and I even baked another batch yesterday, LOL! It was really really yummy!

So here it is… try it!

Preparation time: 15 minutes
Cooking time: 35 minutes

Ingredients:
1/2 cup butter
3/4 cup caster sugar
2 tbsp muscovado sugar (brown sugar)
1 large egg
1 1/2 tsp vanilla extract
1 cup self-raising flour
white chocolate, chopped
flaked almonds
icing sugar for dusting

Procedure:
Lightly grease a shallow baking tin and line the base and sides with baking paper.

Place the butter, caster sugar and brown sugar in a saucepan and stir over low heat until the butter melts and the sugars dissolve. Remove from the heat and leave to cool.

Preheat oven to warm 170C (325F).

Place the eggs in a bowl and beat with electric beaters until thick and pale. Add the vanilla extract, flour and cooled butter mixture and mix well. Stir in the white chocolate and half of flaked almonds.

Spread into the baking tin and sprinkle the remaining almonds over the surface. Bake for 35 minutes, or until golden. The centre will be soft and chewy. Leave to cool in the tin, then lift out and trim edges. Dust with the icing sugar and cut into square.
